I have been thinking about what makes an English Afternoon Tea so special, and what I expect if I am invited to one or if I go to a tea house in England.  It is important to have both savoury and sweet courses, and of course an excellent tea.  I am already drooling over the recipes I want to share with Tokyo, including (of course) homemade scones, fairy cakes, victoria sponge, amongst others.  They are all surprisingly easy to make, yet so often they are not done right.  I hope we will have better success!
